Thirsty Thursday: Watermelon Mojitos

Today's Feature: Watermelon Mojitos
30 large fresh mint leaves, coarsely torn by hand
        3-4 thick slices fresh watermelon
        12 oz Bacardi light rum
        ½ cup simple syrup, see below
        6 Tbsp freshly squeezed lime juice (3 limes)
        Sprigs of mint and spears of watermelon, for serving
    Simple syrup:
        Put 1 cup sugar and 1 cup water in a small pan and simmer until the sugar dissolves. Chill.

Use a mortar and pestle to mash the mint leaves. Remove and discard the rind and seeds of the watermelon.  Put the fruit into a food processor fitted with the steel blade and puree. Put the mashed mint into a large pitcher with 2 cups of pureed watermelon, the rum, simple syrup, and lime juice and stir to combine. Pour the mixture into a pitcher for serving.

Place ice cubes in 6 glasses and pour the mojito mixture into the glasses. Garnish with sprigs of fresh mint and spears of watermelon. Serve ice cold. via

I don't know. I love me some mojitos, and watermelon. But together? Let's just say if my watermelons come in this year instead of being eaten by squash borers, I'll try it. For the time being, I'll try not to use all my sweet mint crop on standard mojitos.

well, I love watermelon. I dont usually drink and the only alcohol I dont find hard to drink is cocktails. This one looks like a summer drink. Im definately gonna try it once the summer comes here Down Under. thanks for sharing

O! These sound so yummy! I'm not a big mojito fan but like one every now & then- adding watermelon may make this dangerous ;)
