Tasty Tuesday

with the weather warming up and our goals at getting fit, i thought this was a perfect salad to share!
Balsamic Vinaigrette Dressing
1/4 cup balsamic vinegar
1/2 teaspoon Dijon mustard
1/8 teaspoon salt
freshly ground pepper to taste
3/4 cup good quality extra-virgin olive oil
In mixing bowl whisk together the vinegar, mustard, salt and pepper until well blended.  Gradually pour in the olive oil while constantly whisking.  Whisk rapidly until the dressing is emulsified.   The dressing can stored in a tightly covered jar on the counter for 24 hours or in the refrigerator for one week (bring to room temperature and shake well).

Radishes are not really my thing, but those watermelon radishes look awesome. I haven't heard of them before.

That salad dressing looks incredible! I'm pretty sure I have all the ingredients at home, and some spring mix and kale calling my name... :)
